This is a popular Egyptian side dish, eaten as a relish or pickle with meals, or as a snack in pita bread as a sandwich. It can also be added to other sandwiches such as falafel to give more flavor. Use the regular dark purple large eggplants available in stores, not the long and slender white or purple types used in other Egyptian recipes.

Ful Medames is the Egyptian national dish made from fava beans, and is the staple for many Egyptians.

It is eaten as a breakfast, as well as a snack or fast food sandwitches.

Since fava beans has a very hard shell, it takes a lot of time to cook it on a very low heat. It used to be done in a special utensil. See the details in vanishing ways of cooking in Egypt.

It is also spelled as Foul in English.

Qamar El Din : Dried Apricot Extract قمر الدين

Qamar El Din قمر الدين literllay means : Moon Of Religion, although the etymology is unknown. It may have originated in Syria where apricot has been a crop for centuries, and a method of preservation was to dry it with sugar for later use.It is made from sweetened dried apricot extract packaged as sheets in orange colored cellophane.It is used to make a juice, also called Qamar El Din (see recipe), as well as an orange sweet pudding called Meshmesheya.
