Okra / Lady's Fingers بامية

Notes:

Okra bushes grow in Egypt along side canals. It has a nice looking light purple to pink flower

It is a popular dish there and in Sudan, as well the southern United States, and in the Caribbean.

In Egypt, large pods are undesirable, and the smaller the fruit, the more tender and less seeds it has.

The stem part has to be removed by using a small paring knife and peeling in a way to leave the fruit intact with a cone shaped end.

Large pods are consumed in the Sudan in a hot dish known as Wika.

Grilled Minced Meat Kofta كفتة مشوية

Notes:

Kofta is made of minced meat and cooked in various ways. It can be fried, grilled in the oven, or on a barbecue.

Preparation Time: 0.75 hours

Ingredients

1/2 kg. minced meat.
1 onion, medium size, grated.
2 tablespoons rice powder.
4 garlic cloves.
Salt & pepper.
1 cup water.
1 cup white beans cooked.
1 spoon mustard.
2 spoons vegetable oil.
2 spoons vinegar.
Lettuce for decoration

Liver كبدة

Notes:

Beef or sheep liver is considered a delicacy in Egypt.

Servings: 5

Preparation Time: 1 hours

Ingredients

1 kg. liver.
2 tablespoons ghee or butter.
Salt.
Pepper.
Garlic

Cooking Instructions

Cut liver into slices.
In pan fry garlic in ghee or butter till it becomes yellow.
Add liver, salt and pepper and mix together with garlic in the pan.
Add water till liver is well done.

Fattah فتة

Fatta is an ancient Arab dish, called ثريد (thareed).

It is traditionally served with lamb meat, but beef or chicken can be used.

Preparation Time: 0.5 hours

Ingredients

2 kg lamb meat.
8 loaves of Egyptian flat bread (pita).
1 cup vinegar.
3 cups rice.
7 cloves garlic.
5 tablespoons margarine.
2 tablespoons tomato paste.
3 Cardamoms.
5 cups water.
Mastic resin
Salt and pepper.
