Koshari كشري

Koshari is originally a vegetarian dish from India.

In Egypt, it has two variants, one in Cairo and one in Alexandria.

The Cairo recipe uses pasta, whole lentils and hot sauce.

The Alexandria recipe is restricted to yellow/red lentils and rice only.

2 cups Egyptian rice (similar to Italian starchy short grain varieties).
1/2 kg chicken livers.
3/4 cup almonds.
1/4 cup hazelnut.
1/2 cup raisins.
1/2 cup pine nuts.
2 teaspoons cinnamon.
2 tablespoons margarine.
2 pieces cardamom.
2 pieces mastic resin (from Greek food stores)
Salt.

This is a popular dessert in Egypt.

Variation can include adding raisins, shredded coconuts, various nuts, or even a scoop of ice cream on top.
