Boiled Brain مخ مسلوق

Notes:

Boiled sheep or cow brains are eaten as a delicacy or appetizer in Egypt and the Middle East.

Servings: 4

Preparation Time: 0.75 hours

Ingredients

Brain.
Lemon juice.
1 onion.
Salt.
Pepper.
Mastic resin
Flour.
Cardamom

Cooking Instructions

Carefully rub the brain with salt and flour, then wash.
In a bowl put the brain in salt and water, leave for 20 minutes. Then wrap in a piece of muslin cloth or gauze.
In a deep pan boil water and put the wraped brain into the pan with onion, salt, lemon juice, cardamom and mastic.
Take the boiled brain out of pan, leave to cool down.
Serve hot or cold.
