Egyptian Pumpkin Pie with bechamel قرع عسلي بالبشامل

Notes:

This is a sweet dessert that can be served warm or cold.

Servings: 7

Preparation Time: 3.5 hours

Ingredients

1 pumpkin.
3 tablespoons flour.
3 cups sugar.
2 tablespoons butter.
4 cups milk.
Nuts and raisins.

Cooking Instructions

Peel pumpkin.
Cut into large square pieces.
Put pumpkin pieces in a large deep pan.
Add sugar and heat over low heat until tender.
Take pumpkin pieces out of pan.
Leave sugar and liquid aside.
With a masher, mash pumpkin well and spread in a baking dish.
Sprinkle raisins and nuts on top of serfice.
In a saucepan melt butter and add flour, stir until smooth.
Pour milk while whisking.
Add reserved sugar liquid and bring to boil.
Pour sweet bechamel over mashed pumpkin in baking dish.
Put baking dish in oven and bake until surface becomes golden brown.
Serve hot or cold.

Do I use a round pie dish? Can I use canned pumpkin? And if so, how much?

You can use round or square. It does not matter.

You can use canned pumpkin if it is firm enough. Start with about 2 lb (500 g), and adjust from there.

I Add the reserved sugar liquid to the milk and flour and then I bring to boil.
