Okra / Lady's Fingers بامية

Overview

Okra bushes grow in Egypt along side canals. It has a nice looking light purple to pink flower

It is a popular dish there and in Sudan as well.

In Egypt, large pods are undesirable, and the smaller the fruit, the more tender and less seeds it has.

The stem part has to be removed by using a small paring knife and peeling in a way to leave the fruit intact with a cone shaped end.

Large pods are consumed in the Sudan in a hot dish known as Wika.

Colcasia قلقاس

Overview

Colcasia can be seen as an ugly looking tuber that exudes a sticky sap when cut.

However, when cooked right, it is a delicious and different dish.

- Peel and cut kolkasia into cubes.
- Heat broth in a deep pan and add colcasia and lemon juice then leave to boil until tender.
- Melt ghee or butter in a skillet, add garlic, coriander, dill and chard. Fry till dark green.
- Blend mixture then add to kolkasia.
- Leave to boil then serve while hot.
