This is a special omelete style breakfast dish.

Ingredients

  • 5 eggs.
  • Parsley.
  • 1 onion.
  • Salt and pepper.
  • 2 tablespoons Butter or margarine.
  • 1 tablespoon flour.

Cooking Instructions

  • Heat and stir 1 tablespoon butter or margarine in a skillet, add onion and stir until yellow.
  • Add parsley and flour, stir until smooth.
  • Take off heat and leave aside.
  • In bowl beat eggs and season with salt and pepper then pour onion mixture onto eggs and stir to mix well.
  • Heat 1/2 tablespoon butter or margarine then and eggs mixture into skillet.
  • Cook until the bottom of eggs is golden.
  • Flip the eggs to cook the other side.
  • serve in platter while hot.
