Ingredients

  • 1/2 kg. eggplant
  • 1/4 kg tahini
  • 4 tablespoons vinegar or lemon juice.
  • 3 onions, medium size
  • Salt and Pepper.
  • 4 garlic cloves
  • Parsley.
  • 1 tablespoon cumin
  • 3 tablespoons vegetable oil.

Cooking Instructions

  • Wash and slice eggplant and onion.
  • In a baking dish, bake the eggplant in oven till well done.
  • Mix the eggplant and onion with tahini and lemon juice or vinegar and little water.
  • Blend all together.
  • Add garlic and oil, mix all together.
  • Serve in platter and decorate with parsley.
