- Brain.
- Lemon juice.
- 1 onion.
- Salt.
- Pepper.
- Mastic resin
- Flour.
- Cardamom
Cooking Instructions
- Carefully rub the brain with salt and flour, then wash.
- In a bowl put the brain in salt and water, leave for 20 minutes. Then wrap in a piece of muslin cloth or gauze.
- In a deep pan boil water and put the wraped brain into the pan with onion, salt, lemon juice, cardamom and mastic.
- Take the boiled brain out of pan, leave to cool down.
- Serve hot or cold.

- In a deep pan boil water and put the raped brain into the pan with onion, salt, lemon juice, cardamom and arabic gum.
- Take the boiled brain out of pan, leave to cool down. Then serve.
