Ingredients

  • Brain.
  • Lemon juice.
  • 1 onion.
  • Salt.
  • Pepper.
  • Mastic resin
  • Flour.
  • Cardamom

Cooking Instructions

  • Carefully rub the brain with salt and flour, then wash.
  • In a bowl put the brain in salt and water, leave for 20 minutes. Then wrap in a piece of muslin cloth or gauze.
  • In a deep pan boil water and put the wraped brain into the pan with onion, salt, lemon juice, cardamom and mastic.
  • Take the boiled brain out of pan, leave to cool down.
  • Serve hot or cold.
